FAQs

Why do you soak sweet potatoes before baking? ›

The cold water bath helps rinse the starch off the sweet potatoes so they're a bit more crispy. That said, if you do not have the time, you can still get crispy baked sweet potato fries by using high heat and a little drizzle of olive oil.

Is it better to bake sweet potatoes in foil or not? ›

The most important thing to note here is that I DON'T wrap them in foil. If you do, the sweet potato flesh will still cook, but the skin will be very moist and almost slimy. In order to get delectable, puffed up crispy skin and caramelization on the outside of each baked potato, place them onto the baking sheet bare!

How does Ina Garten bake sweet potatoes? ›

Directions
  1. Preheat the oven to 375 degrees F.
  2. Scrub the potatoes, prick them several times with a knife or fork, and bake them for 1 hour or until very soft when pierced with a knife. ...
  3. Bake the potatoes for 20 to 30 minutes, until heated through.

Why do sweet potatoes poke holes before baking? ›

Do you have to poke holes in sweet potatoes before baking? Typically holes are poked into a sweet potato to prevent a potato exploding in your oven. However, the chance of that happening is low, and according to Lifehacker, sweet potatoes will retain more flavor if you don't poke them.

Do you have to wash sweet potatoes before baking? ›

Sweet potatoes grow in the ground, and skipping the cleaning step means dirt or grit can end up in your sweet potato casserole. Before cooking or cutting sweet potatoes, wash the skins and give them a scrub with a clean vegetable brush.

Should you soak potatoes in salt or sugar water? ›

Why use salt water for soaking potatoes? There's moisture naturally found in potatoes, and moisture is drawn to higher concentrations of salt. (This is a process called osmosis.) So, if you put the potatoes in a salt water bath, that will help draw out some of their moisture, resulting in crispier fries.

Do sweet potatoes get sweeter the longer you cook them? ›

The longer and slower you cook a sweet potato, the more maltose is formed and the sweeter it will taste. So if you want a much less sweet potato try steaming it, or cut it into small pieces and roast on a higher heat.

Why freeze sweet potatoes before baking? ›

Freezing sweet potatoes drives excess water out of the potato, resulting in an interior with more concentrated flavor. Freezing also lowers the starting temperature of the potato, allowing more time for amylase enzymes to convert starch to sweet-tasting maltose.

How do you keep sweet potatoes from drying out in the oven? ›

They'll take longer to cook when whole so leave them covered the entire time. In fact, try wrapping the potatoes in a foil pouch. This keeps more moisture in, which will help cook the potatoes evenly and prevent them from drying out.

How to bake sweet potato in oven Martha Stewart? ›

Pierce potatoes all over with the tines of a fork and bake in oven, directly on rack, until soft and caramelizing, 1 1/2 hours. Slash the tops of potatoes open with the tip of a sharp knife and push ends of each potato toward each other to open. Divide butter, salt, and pepper among potatoes and serve.

How do you make Patti Labelle sweet potatoes? ›

Boil the sweet potatoes in a large stockpot until soft, about 25 minutes; drain. When cool enough to handle, peel the potatoes and transfer them to a large bowl. While the potatoes are still warm, add the butter, cream, agave, cinnamon and salt, and mash until smooth. Sprinkle with the orange zest.

Should you wrap sweet potatoes in foil before baking? ›

Note that we are not wrapping the sweet potatoes in aluminum foil. Foil traps moisture, and we want the excess moisture to escape from the sweet potato during baking. That way, we'll get delicious condensed flavor inside and avoid soggy skin on the outside.

Should you pierce baked sweet potatoes? ›

Poke a few holes in each potato so that steam can escape as the potatoes bake. Arrange on a baking sheet. I suggest lining the baking sheet with parchment paper for easy clean up.

What temperature is a baked sweet potato done at? ›

If you'd like a more precise indicator, insert an instant-read thermometer into the thickest part of the sweet potato. The internal temperature of a cooked sweet potato should read between 205- and 212-degrees Fahrenheit.

What's the point of soaking potatoes before cooking? ›

Soaking potatoes in water helps remove excess starch. Excess starch can inhibit the potatoes from cooking evenly as well as creating a gummy or sticky texture on the outside of your potatoes. Cold water is used because hot water would react with the starch activating it, making it harder to separate from the potatoes.

How long to soak sweet potatoes to remove starch? ›

Transfer to a bowl filled with ice and water and let it soak for 30 minutes. The cold water helps with removing excess starch and crisping up the potatoes later. The longer it sits in the ice, the better.

What happens when you soak a potato in sugar water? ›

As the amount of sugar solution increases in the other containers, the mass of the potato cores goes down. If the water is highly concentrated with sugar, the water actually leaves the potato because there is a higher concentration of pure water in the potato than there is in the sugar water.

Why do you soak sweet potatoes in water before air frying? ›

Some recipes call for soaking the sweet potatoes in water before cooking them to help remove some of the starch and make them more crispy but have found that this step isn't necessary for sweet potatoes as they don't have as much starch as regular potatoes.
